Get blank music paper and use standard music notation to write down the melodies. If you can't write music notation quickly and accurately, your best bet might be to forget about writing it down and just record your ideas on a small tape or digital recorder.
Or if you have a good memory, you could just write the chord changes over the lyrics and remember how the melody goes.

You can purchase blank sheet music, called manuscript paper, and simply fill in the clefs and key signatures and begin writing your melody.
A shortened method is to write down a short slash and stem for a quarter note and the usual egg-shaped note for the half, the three-quarter, and the whole note. Then, once you are satisfied with the score, re-write it by giving it a professional touch either by pen or by computer.
