I was going to say it was plausible because of the Teddy Roosevelt assassination attempt in which a thick speech and tip of a glasses case slowed an assassins bullet enough that he was able to make his speech and then go to the hospital. However, since I'm not a munitions expert, I'd have to say maybe if it was thick enough and other things slowed down the velocity of the bullet. Perhaps this is something the Mythbusters could tackle on a future program, if they haven't already.

That would depends on how far away is the gunner. If the gunner is say, 200 meters away and that bullet accidentally stray and shot a bible, it is highly possible.
At point blank distance, you better have two volumes of encyclopedias protecting you. Even bullet vests are not very effective in point blank distance (depending on the gun / riffle used).

Books as thick as the KJV of The Bible are known to stop bullets from older guns. Though I doubt you can go into Iraq and hope to survive a bullet to the chest with the guns we have nowadays...

there are well attested stories of bibles which have stopped a bullet (in a combat situation bullets do not always arrive by the direct route).
there are equally well attested stories of bullets being stopped by decks of cards, racing form books, cigarette cases, and pornographic novels.
those stories don't get the same level of publicity.

It probably can happen if the bullet has dropped to a low enough velocity and the Bible has a hard enough cover.

I suppose that once a bullet strikes the unholy bible, the bible could then be considered truly holy… but not before.
