It is really a good question. If man's mind is nothing but an "evolved" animal mind then why should we even be able to seek to know truth? The difference between the animal mind and the human mind is not just in degree, but in kind. The human mind as the ability to evaluate and choose; to think in abstracts (symbols and mathematics); to design and create in multiple levels of complexity; is aware of time and of the limits of life; can ponder death and its implications. Humanity is the only moral and spiritual animal. All of which reflects its essence and creation.

There are psychological principles at work here. We can generally correlate anything based on partial information. Its what allows us to understand that if we see a shadow of something we can usually tell what it is a shadow of based on shape and relative distribution. The same thing happens in this case. There is enough of a picture (in this case each word is a "picture") to allow us to make a meaningful whole based on context and relative structure. So its not that we are "reading the word as a whole" but rather we are piecing together a whole into something meaningful.

I've seen it before on TV but I think it depends on the context of the word and how you arrange the middle letters, for example, sriserpud and sruicety are valid words but I know I wouldn't get them straight away if I'd just read them a moment ago.
