Here are complete instructions on how to cook pasta:

http://www.bellaonline.com/articles/art16616.asp

If you need to pre-cook the pasta remove it from the water BEFORE it is fully cooked. The heat will continue to cook it. When you are ready to serve it quickly dip it in very hot water, stir, and drain. This works much better with thicker pastas such as linguini, penne, or shells. Try not to do it with spaghetti or cappelini.

Don't rinse the pasta, this removes the surface starch which helps the sauce to stick to the pasta.

Cooking Pasta Ahead Of Time

Cook the pasta as usual, adding about a tablespoon of olive oil when the water boils. Drain and leave in the pan. You can either reheat by running hot water over it, or you can microwave it for about 20 seconds.

Leaving it in the water (and overcooking) is what makes it mushy.

yer mom is a wise lady! Boil the pasta until just after "al dente" (cause if you leave it al dente over night, it does go funny) so cook it all the way through, drain all the liquid and pour into a bowl- let all the steam dissipate- stir it a couple times. When it stops steaming, drizzle liberally with olive oil (just to lightly coat each piece) and refridgerate! It will be perfect for the next day.

Have a plan. Know what you're cooking the night before.ENTIRE MEAL. Lay our whatever possible on the counter, put the rest together in fridge If you're making pasta, fill the pan with water IN THE MORNING, slap the lid on, and turn in on as soon as you get home from work. Same thing with the oven if you need it. Do not pass go, do not go pee----turn the oven on. Get a slow cooker, make it your best friend. Nothing bad has ever come out of a crockpot. Google slow cooker recipes.

Not if you store it in cold water in the frig.
Put in a bowl or pot of water 2 to 1 water to pasta.

To reheat
Boil a large pot or kettle of water.
Just pour out the pasta into a strainer to drain off the cold water.
Pour the hot water over the pasta drain it, and serve it up.

Yes, you need to cook it in a lot of boiling salted water(with tablespoon of oil) until it is done but not over done. Pull a strand out of boiling water with a fork and taste to see if it is done. Pour out into col lander immediately. Try to coordinate with cooked sauce. Put pasta in lg bowl or plate and pour sauce over it immediately and enjoy.

You never leave it in the water! Cook it with a little oil to stop it 'glueing' together, drain well cool, cover & keep in fridge till you are ready to use it. Put into a colander & hold under running hot water for long enough to get it hot. This is how they do it in most restaurents & cafes.
