Cut the leaves and root end from the stalks, and then wash the individual stalks under running water (use a vegetable brush). Cut the stalks in pieces, and put them in a bowl or plastic container with water, and cover the container. The water will plump the cells and keep the celery crisp. If you don't use the celery for a few days, replace the water.

I have tried for years to keep it nice and crisp in water, changing the water even daily. Doesn't work well. Watching a food show a few years ago, I learned that keeping the celery in aluminum foil will make it last much longer, and it is true. No water, just foil.

Perhaps the vegetable drawer in your refrigerator is too cold and/or too dry. If celery freezes (or comes close to freezing) it will wilt like lettuce does. Another solution is to just use the celery in a "catch all" type of dish. I roast vegetables about once per week and celery is one of my favorites. Keeps the rotation up and gives me a tasty and healthy side dish.

The water thing works well. But I just buy it loose somewhere when I need it. I got sick of throwing it out. When it's just you alone a bunch of celery is way too much.

Either store it in the fridge in a pitcher of ice water, or wash it first and store it in wrapped in a paper towel inside a ziploc bag.
