if he's into a chinese or japanese MA why not give him an appropriate weapon. A wooden staff or sword usually isn't that expensive. If some of the group are willing to chip in it might even be interesting to check for a steel counterpart.
the former president of our association got offered a steel katana for his 60th birthday. He loved this gift so much that he requested to be buried with it. Which unfortunately took place a few months after.

You could challenge him to a sparring match for one last time. Realistacally though, you may take him to dinner with your family, or find out about his other hobbies are. With this info maybe he needs something for his golf game, or workout room. When I left my dojo for judo, I simply asked for a picture with my sensei and sent him a framed copy.

Perhaps get all the students together,without him knowing,and take a nice class picture.Frame it nicely and give it to him.
Go to the hardwood supply house and get an Oak shaft of the right diameter & length for a staff.If several students pitch in you can have it shaped,sanded & finished in one afternoon.A very nice gift from the whole class.

A Hanko would be a great gift. It is the stamp that identifies a person. A personal seal. like this...

A thank you letter explaining how he has inspired you, what makes him an excellent instructor, etc. Not only is this much more personal, but it will inspire him as well to continue setting the example that students want to emulate.
When someone thanks me for showing them the way, it always motivates me to continue becoming better so I can bring them to the next level (yes, the instructors should strive to become better and not be complacent!).

Though if it's something physical, a photo of his class in a nice frame is a really good idea. Also, a thank you letter with all the students signing it.
Go for something that shows he was appreciated and again, respect him always.

Dont make it about dojo. Make it about something hell be using a lot , so it can remind him of you. In the end - he is your sensei , you know him best.
