Here are three:

Psalm 17:8, "Make me as safe as the apple of your eye, Hide me under the shadow of your wings." Easy English translation

Zechariah 2:8, "For thus says the LORD of hosts, "After glory He has sent me against the nations which plunder you, for he who touches you, touches the apple of His eye." NASB

Deuteronomy 32:10, "He found him in a desert land And in the wasteland, a howling wilderness; He encircled him, He instructed him, He kept him as the apple of His eye."

Let me add this note: the "apple of the eye" is an English idiom denoting the pupil of the eye and therefore a precious thing. In Hebrew, apple means literally "little man" and presumably refers to the reflected image of one's self which the beholder sees in the eye of another person. If one could look into the eyes of God, you will see reflected there your own image. One of the greatest gifts given to human beings is the fact that we are created in the image of God!

Go to Bible Gateway and do a Keyword Search and type in apple ~ it gives you all verses connected with that word :)

I have my search set for the King James Version but you can change it to another if you like. I only use KJV and NKJV because too many other versions (NIV being one of them) have been twisted and are not Biblical in many areas so be careful what you read and study from so you aren't misled from the truth.
