Ok I think you meant to ask about the large flaps. Cause asking why they need ears is rather err...dumb?
They have the ears they do for many different reasons. Sight hounds such as german shepherds have ears that stand up. This allows them to triangulate where a sound is coming from. Scent hounds like Bloodhounds have droopy ears to help catch scent molecules close to their face. This is also why they have lots of extra skin around their face.
Mix breed dogs are at the mercy of their breeding and genetics.

Wow good question. I am not positive, but I believe dogs have ears for the same reason people have ears.
