Try adding a little light sour cream to your cake mix.

You know they do have these pudding cakes too, maybe some sugar free pudding mix but I think you would have to add extra oil with that.

I use a combination of Splenda and polydextrose - about 1/2 & 1/2 usually works for most things. You might cut your recipe to 1/8 or 1/4 the size of normal, and bake a test of 1:1 replacement (1c PolyD replaces 1c sugar) and the 1/2 & 1/2 technique.

The PolyD is a fiber, and it replaces some of the bulk of sugar, it also holds some moisture. It's available at honeyvillegrain.com - or http://tinyurl.com/29vjv9.

And, good news! The polyD can make great frostings, too! Depends on the recipe, techniques or weather. One that works best is a Swiss buttercream - make syrup, then beat the syrup into butter. You can also powder the PolyD in a blender or food processor.

There are several things you can add to make your cake more moist (plus, watch baking times and temps!):

1. Applesauce is a nutritious way to add fibre and moisture to your cakes.
2. Plain yogurt or low fat sour cream
3. Ripe bananas (great in yellow cake or spice cake mixes)
4. Egg substitute such as Egg Beaters

You may want to:
> Check how long you & the temperature you are baking the cake - you may be over-baking it
> Increase your wet ingredients slightly
> Add pureed fruit (applesauce seems to be very popular)
> Adding some sugar-free pudding mix to the batter and adding milk to compensate

Do you have to have sugar free products. Because if you don't. Pillsbury makes 2 cake mixes that are reduced sugar and they use splenda in it. They are pretty good! :)
