Why are so many people elegiac to wheat when it is a nayural product that grows?

I was very surprised when I read in a heath magazine that wheat alligeys are 100 X more common them E-number alligeys as wheat is natural and E-numbers are man made.

allergies occur when your body's immune system recognizes some protein inside you as foreign and potentially dangerous. "natural"-ness isn't a benefit here; in fact, it may make an allergic reaction more likely. Why allergies happen and what makes some people more prone to certain kinds than others is a neat area to look into. I'm not sure what you mean by "E-numbers", so I can't really comment on that part of it.
