yes, it might actually taste better just be careful not to overcook it.

My mom always used a roaster for chicken and dumplings. It has to be cooked longer then a broiler (fryer) as it is older and tougher. A broiler is less then 3 months old and a roaster can be up to 5 months old. She grew up on a the farm and they usually made chicken and dumplings when they cooked an old laying hen that quite laying. She cooked it long enough that the meat was ready to fall the bone. The roaster will give better flavor as they are older and have more fat.

Yes, they will be the same. May not need to cook the chick as much to have the tenderness.

Roaster is younger aged bird.
