ground beef with a bit of Italian sausage mixed in, and some diced onion. The Italian sausage will give the seasoning too the meatballs. If you are making meatballs for a dish other than an Italian dish, I would suggest adding ground pork, and not the Italian sausage. :)

My meatballs for marinara sauce contain lean ground beef, kosher salt, minced garlic, chopped fresh basil, worcestershire sauce, eggs, Italian bread crumbs, parmesan cheese, and lots of fresh ground pepper.

I make mine from a mix of ground beef and pork, homemade seasoned bread crumbs and some crushed garlic. I cook them up in a skillet with some olive oil, drain and use with whatever sauce we're in the mood for, be it gravy or a sweet and sour.

I mix in (for 1 medium sized package of meat):

italian bread crumbs
1 egg
steak seasoning
1/2 cup ketchup
1/2 cup mustard
1 small onion, finely chopped

Let marinate in the fridge for 1 hour and then form patties and grill/fry/bake.
