A nice roast. Here is what I do personally. I take a market trimmed beef brisket (like Texas style barbecue brisket meat) and put kosher salt and Johnny's Jamaica-me-crazy seasoned pepper on it. I let that bake in the oven at 350 for a couple of hours, then remove. In a skillet, I take the pan drippings and fill that pan with sliced onions, simmer them covered, in the drippings. Remove the onions, heat the dripping to high, make a gravy using flour. When I have the gravy to the consistency and amount of gravy I like (adjusting with the salt and seasoned pepper), I slice that roast up into thin even slices for serving, (it will still be partially uncooked), lay it back in that baking pan, cover it with the onions and gravy, cover the baking pan, and let it cook on lower heat (say 275) for another 3 or 4 hours. Brisket is a tough meat that needs to slow cook. When it is done, I serve this with homemade mashed potatoes (or freshly cooked white rice).

Rigatoni WHOA Foods

1 Jar of Classico Spicy Tomato & Pesto pasta sauce
(Feel free to use whatever pasta sauce you wish, this is my favorite)
1 pound of hamburger 80 % lean should work fine
(1) 16 oz. (1lb) bag of rigatoni pasta
(1) 8 oz bag of shredded mozzarella cheese

13x9 Pyrex baking dish

Preheat over to 350 degrees
Brown hamburger in frying pan on medium heat.
Drain grease

Pour uncooked pasta directly into Pyrex baking dish, add drained/browned hamburger meat, pour jar of Classico Spicy Tomato & Pesto pasta sauce directly over the top of the pasta/meat mixture. Fill pasta sauce jar with water and pour over the top of the pasta/meat/sauce mixture then carefully stir all of these together.

Cover tightly with foil and cook at 350 degrees for 35 minutes, remove from over and stir all of the ingredients again and cook for another 10 minutes or until most of the water has been absorbed.

Remove foil and throw away, stir in 1/4 of the mozzarella cheese and then sprinkle evenly the remaining 3/4 of the cheese over the top of the cooked pasta dish.

Place back in over for another 5 minutes or so, cheese should be fully melted and starting to brown.

Wow is this some good stuff, it makes so much pasta that you will have lunch for several days after word. However this dish reheats very well, so you could probably freeze this for a significant amount of time.

Christmas is a perfect time for a potluck! Perhaps your host/hostess has assigned folks to bring certain types of dishes so that you don't all end up bringing dips and chips or pastas etc. Here are some ideas:

1. Baby spinach salad with mandarin oranges, crumbled bacon, feta cheese, candied walnuts and french dressing.
2. Colassal prawn platter with cocktail sauce (serve on a plate that has lettuce, use a yellow or orange bell pepper to put the sauce in, use slices or wedges of lemon to garnish)
3. Lasagne (2 lbs spicy turkey Italian sausage, 1/2 yellow onion, diced; 1 28 oz can tomato sauce; 3 T dried Italian herbs; 1/2 cup olive oil; 1 tsp fresh ground pepper; 12 lasagne noodles; 1 small box of Velveeta cheese; 1 6 oz package shredded Italian cheese; cook onion with sausage and drain. Add tomato sauce, herbs, pepper and olive oil. Simmer for 15 minutes while noodles cook. Drain noodles and slice Velveeta into 1/4 inch slices. Layer sauce, noodles, velveeta, etc. ending up with sauce and cheese. Cover and bake for 45 minutes or until bubbling)
4. Banana bundt cake: 1 box yellow cake mix, 3 ripe bananas, 1 cup candied walnuts, cream cheese glaze. Make cake according to directions, adding bananas. Pour into prepared bundt pan and sprinkle with walnuts. Bake until done. Pour glaze over cake when cooled and inverted on plate.
5. Asparagas with prosciutto: steam asparagas until crisp tender, cool. Wrap with thinly sliced prosciutto.

My family always makes a strata. You layer a casserole dish with cubes of bread (use about 8-10 slices) and then brown ground sausage and onions in a skillet and then put that on top of the bread, beat 8 eggs and pour over the meat and bread, and cover with shredded cheese. Bake at 350 for about 20 minutes. it is amazing! :)

Here is my personal go-to recipe when I want to make something for a potluck:

Susan's Black Bean Salad

3 cans black beans, drained and rinsed
1 dice red bell pepper
1 diced green bell pepper
1 diced mango
1 bunch green onions, minced
1 bunch cilantro, minced (optional)
Juice of 4 limes
1 Cup bottled salsa
Salt & pepper to taste.

Mix all ingredients together, place in a covered bowl and refrigerate overnight. Toss gently before serving.

There won't be any left.

Sausage Dip

1 roll of hot sausage
2 packs of cream cheese
1 can of Rotella tomatoes

Brown sausage and drain fat. Turn heat down and slowly stir in the cream cheese and Rotella tomatoes. Stir continuously until blended and melted. Serve in a little crock pot with Tostitos.

Chicken and dumplings. You can make it well ahead of time and take it in a crock pot.

Tamale pie can be made ahead of time and stored in the fridge, cook before you go.

Paguch can easily be made an is alway a hit. Buy Rhodes frozen bread dough, let it defrost, roll one loaf out, put it on a cookie sheet, kinda like a pie, In the center goes mashed potatoes with cheese melted in them (I recommend velveeta and longhorn cheeses) and then roll another loaf of frozen bread dough out and put it on top like a crust! Bake until golden brown, baste the outside with onions slow cooked/ fried in melted butter. You can cook it ahead of time and either serve it hot or at room temperature. People love it. Some people call it "potato pizza" but paguch (pa-g-ah-ch) is its Polish name.

Deviled eggs. A favorite of everybody. Take 2 dozen eggs. Put them in a pot of water, Cook till boiling. Then turn off stove and leave on burner. After cooled cut boiled eggs in half and pop out yolks in container. Place egg whites in serving container. Mix yolks with 3 large Tbl spoons of mayo. And 2 table spoons of pickle relish. Mix until creamy. Add more if nessacery. Take yolk mix and place equal amount in empty egg whites. Sprinkle medium coat of paprika, and very very light coat of chilli powder on top deviled eggs. And there you have it, a recipe that you will never forget.
