Here is what you should do
1 bag sun dried red chile's
1 bulb Roasted garlic
S&P to taste
2 tablespoons olive oil
3 cups fresh chicken or beef stock ( depending on the type of meat that you using.)
1/2 teaspoon cumin,chile, onion, and ancho powders.
Steep the bag of the sundried chiles in the stock to bring them back.
Add them to the blender with all of the ingriedients except make that you drizzle the olive oil slowly when blender is on. Then you can run this through a strain to get a smooth consistency on the sauce. Then cook at a slow simmer for twenty minutes to marry all of the flavors. I hope you enjoy,.

Ingredients:
* 2 tablespoons shortening
* 3 tablespoons flour
* 2 tablespoons red Chile powder
* 1 teaspoon of cumin
* 1 teaspoon garlic powder
* 2 c. water
* salt to taste(1/2 teaspoon should do it)
Heat together shortening and flour. Gradually add remaining ingredients. Stir constantly until well blended. Cook 2 or 3 more minutes.

CHICKEN MOLE AND/OR ENCHILADA SAUCE
1/2 c. flour
1/4 c. oil
1 sm. pkg. chili powder
2 cans chicken broth
1 envelope chili mix
1/4 tsp. garlic salt
1 block Mexican chocolate
6-8 chicken breast halves, boneless and skinless
Fry the flour in the 1/4 cup oil. Add the chili powder and cook slowly for 1 minute. Add the chicken broth, chili mix, garlic salt and chocolate. Add chicken breasts and simmer for 45 minutes over medium to low heat. 4 servings.
This can be used as an excellent enchilada sauce. Just omit the chocolate and chicken and use the sauce in your favorite recipe.

Enchilada Sauce
Ingredients-
1 tablespoon vegetable oil
1 cup diced onion
3 tablespoons chopped garlic
1 teaspoon dried oregano
1 teaspoon ground cumin
1/4 teaspoon ground cinnamon
3 tablespoons all-purpose flour
5 tablespoons hot chili powder
4 1/2 cups chicken broth
1/2 (1 ounce) square semisweet chocolate
Preparation-
Heat oil in a large saucepan over medium-high high heat. Saute onion until tender. Stir in garlic, oregano, cumin and cinnamon; saute for a few minutes.
Stir in flour and chili powder, stirring until sauce thickens. Slowly whisk in chicken broth; reduce until sauce reaches desired consistency. Stir in chocolate until melted and well blended.
