what is the purpose of consuming honey before exercise?

the sugars in honey are almost 51% glucose and 49% fructose (which is the combination of sucrose and glucose at a 1:1 ratio).

so basically you are consuming a lot of glucose before exercise. this is not a good habit at all. there is nothing wrong with consuming a chicken breast after exercise but i would consume a form of protein that is digested much faster. it takes about 2 hours before the amino acids from chicken to reach the portal bloodstream and reach your muscles. white fish like tuna or talipa would be digested in 45 minutes, egg whites in 30 minutes and the amino acids from protein powders can reach the portal bloodstream in a little as 15 minutes when consumed with water on an empty stomach.

the source of protein and the quantity will determine the digestion time. lean proteins will never contribute to an increase in body fat.

Honey contains lots of calories. Chicken breasts do not. Building muscle requires protein, you'll get that with the chicken.

My advice: Cut back on the honey, eat more chicken.

the honey probably digests and gives you energy during your workout that you most likely burn off. You wouldn't want to eat like that if you're not working out.
