with dumbbells...

standing military press. you could do them seating but standing provides the same benefits to the shoulders but it also works more stabilizer muscles and your core. basically more bang for your buck. anytime you can do an exercise standing, do it.

front raise and side lateral raises

You would want to work a series of muscle groups in your upper torso.

Lat pulldown would strengthen your latisimus dorsi muscles.

Butterfly (arms straight out to your side, slowly bringing them forward to meet in front of you while extended).

Military press (up and down over your shoulders and head).

Upright rowing.

These are better done on weight circuit machines, but you can adapt them with dumbells.

You should do more than one specific exercise as to exercise each muscle group in that area so that one group is not more developed than the other, and you should do it every other day, not every day.

Improve your posture. For most people shoulders droop inward because of bad alignment of the spinal column.

Do exercise for the upper back - for the traps and rhomboids so that your shoulder plates will be pulled back.

If you're a gym veteran you can try behind the neck presses. Snatch (olympic lift) also improves shoulder alignment.

Shrugs, overhead press, front raises, side raises, upright rows all can be done with dumbells; for mass - increase the weights each workout.
