Mostly peas. But I have a bag of frozen mixed veggies in the freezer because sometimes peas and carrots together are good. Like in soups or rice pilaf. I only keep baby carrots around for making stock.

Both. Any meal is best with two veg, and these make a nice contrast, but take care to turn them out as thought-out tasty dishes, not boiled tasteless as in most British restaurants! Here's an Eastern European way of cooking carrots: preserve the flavour of the carrots by simmering them in very little water until it nearly disappears, then add a little chopped onion sauteed first in a litle butter, and thicken the remaining juices with half a teaspoon of cornflour to make a glaze. Simmer the peas in little water too (briefly if you use frozen ones, so VERY little water) with a sprig of fresh mint, or dried mint if nothing else is available. Wait as the last of the water evaporates before serving, swishing them round gently to get the flavoured juices coating the peas. ENJOY - both.

Carrots cooked with a little water, sugar and a pinch of salt until they form a nice glaze. Or you cant cook the carrots in orange juice with a little cumin.

Peas and pearl onions a classic is always good.
