its probably nothing more than a bad oil sending unit i would change it first before any thing else was done

Mine does the same thing. When your putting your foot in the pedal the oil pressure will go up but when you let of or stop the pressure goes down.

should be oil pressure sending unit, or sensor getting weak. may be pump but far far less common. usually oil press. sensor. should be located just above your oil filter with a wire harness going to it.

Oil gets hot when the engine is running, and cold when the engine is not running ... and the heat/coolness changes the pressure of the fluid.

Something sporadically clogging the pick up on the oil pump..

oil pan gasket, oil pump dying, if the oil is super clean and hasn't been changed in a while, good chance its not working!

Your oil pump might be starting to go bad.
