GINGERBREAD MEN COOKIES

2 3/4 c. flour
1/2 tsp. soda
1 tsp. ginger
1/2 tsp. cinnamon
1/2 tsp. salt
1/2 c. shortening
1/4 c. brown sugar
3/4 c. molasses
1 beaten egg
1 tsp. hot water
1 tsp. vinegar

Mix all ingredients. Roll onto well floured surface. Cut into gingerbread men. Place on greased cookie sheets dusted with flour. Bake at 350 degrees until brown.

GINGERBREAD MEN ORNAMENT COOKIES

1 box gingerbread cookie mix
1 sm. box raisins
1 sm. pkg. red hots
1 plastic drinking straw
1 can clear acrylic varnish

Prepare cookie dough with gingerbread men cookie cutter. Use raisins for eyes and red hots for buttons. using straw, put hole in the gingerbread man's head for hanging. Bake as directed on box. Remove from pan to cool. Let sit for 2 to 3 days. Spray with clear acrylic varnish. Let sit 1 more day to dry. Hang with thin ribbon.

Gingerbread Men

Ingredients-
3 1/2 cups all-purpose flour
1 1/2 teaspoons ground ginger
1 1/2 teaspoons ground cinnamon
1/4 teaspoon salt
1/2 cup white sugar
1/2 cup shortening
1 egg
1 cup molasses
1 teaspoon baking soda
1 1/2 teaspoons warm water
1/4 cup raisins for decorating

Preparation-
In large bowl, cream shortening, sugar, egg and warmed molasses. Dissolve baking soda in warm water and add to egg mixture. Beat until smooth. Mix in flour, spices and salt until well blended. Cover and chill for 24 hours.
Preheat oven to 350 degrees F. Grease cookie sheets. Roll out dough to a thickness of 1/4 inch on a floured surface. Cut out gingerbread men using cookie cutters and place 2 inches apart on cookie sheets. Use raisins to make eyes, noses and buttons.
Bake 10 to 12 minutes in the preheated oven, or until firm. Let cool on wire racks.

GRANDMA'S GINGERBREAD COOKIE'S

5 to 5 1/2 cups all purpose flour
1 tsp baking soda
1 tsp salt
2 tsp ginger
2 tsp cinnamon
1 tsp nutmeg
1 tsp cloves
1 cup shortening
1 cup sugar
1 1/4 cups unsulphured molasses*
2 eggs, beaten

Preheat oven to 375.

Thoroughly mix flour, soda, salt and spices.

Melt shortening in large saucepan. Cool slightly.

Add sugar, molasses and eggs; mix well. Add four cups dray ingredients and mix well.

Turn mixture onto lightly floured surface. Knead in remaining dry ingredients by hand. Add a little more flour, if necessary, to make firm dough. Roll out on a lightly floured surface to 1/4-inch thickness for cutout cookies.

Bake on ungreased cookie sheet. Small and medium-sized cookies for 6-10 minutes, large cookies for 10-15 minutes.

One recipe of this gingerbread dough will yield 40 average-size cookies.

NOTE: if you're not going to use your gingerbread dough right away, wrap it in plastic and refrigerate. Refrigerated dough will keep for a week, but be sure to remove it 3 hours prior to rolling so it softens and is workable.

*you may substitute molasses with 1 1/4 cups light corn syrup for Blonde Gingerbread.

just make basic gingerbread recipe and then roll out like you do sugar cookies. then cut with gingerbread man cutter and wallah ready to bake . if you need the basic gingerbread recipe I have one and am glad to share . Just email me . good luck and god bless.
