you can bake the potato and then scoop out the insides into a bowl so its pretty much a baked potato with no skin.

Maybe make a dish that requires the skin on the potatoes to be off, such as mashed potatoes. I think you can roast them without the skin. So I guess may you could bake them without it.

You can skin them and them bake them, but they can turn out dry.
You can skin them and boil them, then pop them into the oven to get a nice crust. Mmm.
Or, get really big russets, bake them in skin, and then scoop out those starchy innards with a spoon & serve.
Don't forget to make thin-skinned potatoes like fingerlings, yukon golds or red potatoes.

It would be dry and tasteless.
Have you tried twice baked potatoes? You bake them and then scoop out the inside, add cheese, salt and pepper or whatever and put it back in. The hard work is done and he doesn't have to bother with the skin.
TWICE BAKED POTATOES
baking potatoes (russet)
milk (either whole or evaporated)
butter
salt and pepper
cheddar cheese (shredded)
Bake potatoes until done (either at 400 deg. in oven for 45 minutes or in microwave). Cut open lengthwise and scoop out insides. Leave 1/4 inch on the inside.
Put insides in a bowl and mix with milk, butter, salt and pepper until creamy consistency. Scoop back into potato hulls, top with shredded cheddar cheese and bake until cheese melts.

Try it, it's not as if potatoes are expensive, you could put one in with the skin on and then peel it for him before serving and one in without any skin and see what happens.

Skin potatoes and par boil in water. Sprinkle lots of salt and a little oil and then pop in the oven. If father in law is toothless, do not give this to him, as it becomes crispy. Otherwise, give him mash.

You are too thoughtful, just leave the skin on for him if he doesn't like it then he doesn't have to eat it, he can just leave it! I don't like skin on baked potatoes, but I'd never ever expect anyone to take it off for me!

Get the largest bag of frozen hash browns, add a cube of butter, a large carton of sour cream, and one & 1/2-two cups of grated cheddar cheese ( ingredients can be varied to taste). Bake at 350 until browned! You'll love it!
