Yes you can. Most puddings are not refrigerated before you buy them.

Yes you can. After making it, I'm lucky to have enough chocolate pudding left to put into the fridge. eheeee

yes you can eat it with out refrigerating it..
If its those pudding singles that you find in the store Isles those don't have to be refrigerated.

If it's sold on the shelves at the store, then you don't have to refrigerate it.

All that does is keep it cool, and thicken it, as you said. It doesn't make it last longer. It only helps if you've opened the package already.
