What type of skirting board do I need to buy for a 'Victorian property'?

The closest would be ogee, but if you are trying to match it with existing stuff you may have to take a section to a joinery shop and get them to run up some from that. Original skirting was often thicker than the modern repro stuff.

I would be inclined to go for the Torus. An Edwardian house that I had used that, built in the 1920's. I know, not victorian, but I have also seen it in victorian houses.
A word of warning!.... The double sided/profiled skirtings available today are a good idea in theory, but be aware that when used, the back face fitted to the wall can leave a void at the bottom edge. If the skirting is solely fitted using something like "no nails", when carpet is fitted, unless the fitter is on the ball and calculates the optimum placing for the carpet gripper, when the carpet is chiseled into the gap between gripper and skirting, the skirting can be forced off of the wall as it's bottom edge is under considerable pressure to go inwards into the void behind it. I much prefer if possible one sided skirting with bottom square edge for that reason.

if possible take a small section of the existing skirting off and take it down to your local builders merchant / diy store and ask what the closest they have to it is, failing that find a joinery shop/furniture makers and ask if they can make you some up (this is expensive though)
