It's my first time to make some brownies. Can anyone pls help me with my questions. I'd really appreciate it. Thanks in advance!

1. I've used Ina Garten's recipe of outrageous brownies. How can i make the brownies not so fudgy.. more like a crunch
2. I've used flour to coat the nuts, accdg to the recipe , this will prevent the nuts to go at the bottom of the brownie. Well, some of the nuts stayed at the bottom.
3. Again, i've used butter and a sprinkle of flour in the pan to prevent the brownies sticking in the pan. Guess what, some parts of the brownies sticked in the pan.
4. How do I make an excellent chocolate icing for the brownies?
5. Can I use the turbo broiler instead of an oven in baking the brownies?
6. Instead of putting some butter in the pan, what can I used to as a base for the brownies? Can i use aluminum foil. Will this burn ?

3. try PAM or this great stuff called Cake Release (some craft stores like Jo Ann's or Michaels have this). OR make sure you really get enough flour in the pan. a sprinkle won't do it....you need to to coat all the butter with flour.
4. Ganache is a great frosting, but takes a little time. Melt semi-sweet chocolate chips in the microwave and add a cup of whipping cream. Stir until smooth. Let sit for 20 minutes. They beat with an electric blender and add another 1/2 to 1 cup whipping cream until you get a texture you like. Be careful because the more you whip the stiffer it gets.
6. Unless you butter and flour the tin foil it won't work well. Try parchment paper if you are trying to get away from butter/flour. You will still probably get some sticking.

1. brownies aren't supposed to be crunchy? If you mean like the crust being crunchy, you can either blast it with high heat for about 5 min towards the end of cooking, or really whip the eggs well (but not to the point where they become foam- just a little foamy on top) before adding. This usually adds a nice crust.
2. Unfortunately this is something that can't be helped- use whole walnuts coated in flour- these usually don't sink, or don't appear to have sunk because of their size!
3. Use more butter next time- and instead of flour use baking paper
4. melt chocolate and add some butter and icing sugar
5. never used one
6. baking paper, wax paper or parchment will do the trick! Foil will get stuck inside if your not careful!

Add an extra egg to make the brownies more cakey instead of fudgey. You can't prevent all of the nuts from going to the bottom...even coating them. A nonstick spray made for baking works wonders (it has a little flour in it I believe). Do not use the broiler...the oven will work best. I wouldn't use aluminum foil for the brownies.

Triple Chocolate Fudge Icing
6 tbsp. butter
6 tbsp. milk
1 1/2 c. sugar
1 c. chocolate chips
1/2 tsp. vanilla


Mix first 3 ingredients together in a saucepan. Bring to a hard boil. Boil 30 seconds. Will be soupy. Remove from heat.

Add chocolate chips and vanilla. Beat for 2 minutes. Pour on cake. Let set 2 to 3 hours. Icing will harden.

Do not broil your brownies. They will cook on the outside and stay raw on the inside.
