A little hot sauce, then a sprinkle of lemon juice.

The trick is to go easy on the fats (olive oil).

3 Tablespoons Sherry Vinegar
2 Tablespoons Extra Virgin Olive Oil
1 Tablespoon Dijon mustard
1 shallot, diced
1 Tablespoon capers dice
Salt and pepper to taste

place the vinegar, mustart shallot, capers, salt & pepper in small bowl.. Whisk the ingredients together, drizzle the olive oil into the mixture while whisking.

This should produce an oustanding salad dressing.

Here's my lemon vinaigrette. It sounds like a lot of fat, but you don't need much on the salad.

1/3 cup olive oil
Zest of one lemon, juice of two
Big Tbsp. of garlic
Big pinch dried oregano
Pinch of kosher salt and fresh ground pepper

Shake or whip well. It's good on green salads and pasta salads.

Just buy a box of Pierogies. They are really food, like potato ravioli. Boil them and sautee in a little butter and onions. Serve with sour cream.

reduce down balsamic vinegar with sugar until it forms a glaze, add lots of pepper and a bay leaf while cooking. No fat and delicious!

Also, mix 1 tsp of tahini (sesame paste) with vinegar- its lower fat than olive oil and helps coat the leaves and gives it awesome flavour!

Try the juice from a jar of Kosher dill pickles. It tastes better than it sounds, I promise.
