My son used to be picky like that. I have a few suggestions that worked on him.. You can give them a shot.
1- I gave my son fruit smoothies, but mixed veggies in them too. HE LOOOVVEEDD it.
2-Ants on a log. He liked to spread the peanut butter out on the celery, and then hand pluck the raisins very carefully onto the log.
3-Grated cheese- My son does NOT like cheese, but I found that he would eat it if he helped me to grate it.
4- sandwich shapes. He adores peanut butter and jelly sandwiches. But, to make them more fun, I would take cookie cutters and cut them into fun shapes. Might be a good idea since Christmas is just around the corner.
You might notice that the majority of what I listed induces the help of my son. That is what makes it more fun, and him liable to eat. He helps me to make dinner. Nothing major, just like sprinkling the chesse on top of the lasagna. Or to spread the butter on top of the bread for the garlic bread. Helping mommy or daddy make food is always so much fun:)

This particular recipe is VERY TASTY and VERY EASY, but not all that healthy... Boneless Skinless Breasts 1 Jar favorite Spaghetti sauce Shredded cheese (I usually use Jack) Brown breasts in skillet using a small amout of olive oil. They don't need to be "too done" because you're going to bake them afterwards. I usually sprinkle a little seasoning on them as they are browning over a low to medium flame. Typically for about 10 to 15 minutes. Put the breasts in a 9x13 glass cassarole container and pour the spaghetti sauce over the top and sprinkle with grated cheese (you can also add mushrooms, diced onions or whatever else your family enjoys) and then bake for 35 to 40 minutes at 325 degrees. Another good thing that I sometimes do with boneless skinless breasts is to put them in a glass cassarole, sprinkle with some lemon pepper and a garlic salt, and garnish tops with thin slices of lemon. Then add about 1/4 cup of water with some lemon juice into the cassarole container and bake at 325 for about 40 minutes (or until chicken is done)...this is easy and the breasts are usually very tender, moist and have a nice lemon-y zest to them!

BTW I have 3 kids, so I know what you mean, all of mine are good eaters though, thankfully, my 2yo fav veggie is green beans, my 4yo fav veggie is broccoli, my 9yo loves sweet potatoes, just cut up and a little butter and salt.

Sheppards Pie
put any veggies you have in a pot with enough water to cover. Bring to boil and cook till soft. Put through a food processor till it is blended.
fry mince onion and garlic till browned. Add veggie mix. thicken with gravy powder. put in a oven proof dish.
peel 6 large potatoes. boil till cooked. Mash with a bit of butter and milk. Spoon over meat. Sprinle with grated cheese. Bake in oven till cheese is melted and browning.
my very fussy son LOVES this. He never has realised how many veggies are in it because he can't see them

That's thing with kids they lke the same thing over and over. My son is the same way. As long as he is eating i'm happy. Don't hurt to try new foods but again she is 3 as she gets older she like different foods. I wouldn't sweat about it

Get english muffins and top with tomato paste or barbeque sauce and any topping she wants on top. (chicken, mushrooms, tomato, capsicum, pineapple, ham, and plenty of cheese!) They are a great size and quick and easy for both of you to make.
Does she like sausages? or the little frankfurt ones? You can try her with 'pigs in blankets'. Just get a sheet of puff pastry from the freezer section of the supermarket and cut out squares of pastry to fit around a sausage or frankfurt. Roll each one in pastry and add a dob of BBQ sauce and some grated cheese inside and bake in the oven for about 10-15mins.
My kids also like 'Spud Monsters'! All it is, is mashed potato and then peas, corn kernals and carrot (or any vegies you come up with). We form the mashed potato inside a large cookie cutter of a person or animal and then 'decorate' with the vegies; eyes, hair, mouth, nose etc...
You can also try making bubble and sqeak. Its mashed potato with peas and corn mixed in and then coated with egg and bread crumbs and shallow fryed to golden brown.
Also we like to have our own 'Subway' for dinner and I grill crumbed chicken pieces and then cut up all different types of salads. We got the same sort of long rolls and each fill with our own salads. Tasty, healthy and easy.
You can try making you own chicken nuggets with diced chicken breast or chicken mince. Add in some finely grated vegetables like zuchinni, carrot, brocolli and then crumb them with egg and breadcrumbs and fry or bake in the oven. She will get extra vegies in that way.
My kids absolutely love kebab's or skewers. (not sure what you call them but essentially its 'meat on a stick!) Just cut up chicken or thick ham or meat and thread onto bamboo skewers and grill on BBQ or frypan. You can marinate them in whatever she will like, like a honey and soy marinade to make it sweet.
My friend also told me that Jerry Seinfelds wife I think her name is Jessica?, released a child friendly cookbook where she has come up with all sorts of recipes that include vegetables and everything healthy in them. Like chocolate cake with brocolli in it! Sounds awful but supposedly tastes great.

try frozen cheese and spinach ravilois, i put a little olive oil on them and let them cool and my 4yo picky eater LOVES them.

u can prepare noodles, which is healthy and faster. add vegetables like onion, tomato, carrot, potato. it tastes good and also healthy.
