The Joy of Cooking is very thorough. I also like the Betty Crocker cookbook. both are great general cookbooks.

There are multitudes to choose from, many that are very good. Old favorites include any Better Homes & Gardens or Betty Crocker cookbooks. They have classic recipes that most folks can tackle.

Fannie Farmer, any edition. The last two have more illustrations and instructions for 'modern' equipment, but all are thorough in explanations and instructions. The recipes are easy to follow and the indexes are cross-referenced, too.
