Cheesy Fried Squash
INGREDIENTS
4 yellow squash, sliced
1/2 cup creamy salad dressing (e.g. Miracle Whip)
1/4 cup grated Parmesan cheese
1 cup all-purpose flour
1/2 cup vegetable oil
1 large sweet onion, sliced
DIRECTIONS
Place squash in a large bowl and pour in creamy salad dressing. Cover and refrigerate for 30 minutes.
Remove squash from refrigerator and sprinkle in the parmesan cheese; mix to coat well. Stir in the flour, coating well.
Heat oil in a large skillet over medium-high heat. Carefully place squash in oil and fry until lightly browned. Turn once, and add onions. Fry until squash is browned on both sides. Using a slotted spoon remove squash and onions, and place on paper towels to drain.
Spicy Pan Fried Squash
INGREDIENTS
1 acorn squash, halved and seeded (you can use any squash)
1/2 onion, cut into chunks
2 tablespoons all-purpose flour
2 eggs, lightly beaten
1 tablespoon ground cumin
salt to taste
ground black pepper to taste
ground red pepper to taste
1/4 cup olive oil
DIRECTIONS
Cut squash into chunks and remove rind. Shred squash and onion in a food processor. Place in a colander and press with a potato masher to drain any excess liquid. Transfer to a bowl and mix with flour and egg. Season with cumin, salt, pepper, and red pepper.
Heat the oil in a large skillet over medium heat. Place walnut-sized scoops of the squash mixture into the hot oil. Press flat with a spatula. Cook 3 to 5 minutes on each side, until golden brown. Drain on paper towels.
Country Fried Squash
INGREDIENTS
6 pounds butternut squash - peeled, seeded and sliced
1 egg, beaten
1/2 cup milk
1/2 cup all-purpose flour
1/2 cup cornmeal
1 pinch salt
1 pinch ground black pepper
1 pinch garlic salt
1 cup oil for frying
DIRECTIONS
Combine egg and milk together in a small bowl, mix well.
In a second bowl, combine flour, cornmeal, salt, pepper and garlic salt. Dip squash slices first in the egg mixture, then dredge the squash in the dry mixture.
Heat 1/2 inch of oil in a deep skillet over medium heat. Fry squash until golden brown.

I slice the squash, make a egg and milk batter and put the squash in, then I flour them and fry. Salt and pepper to your taste. That way if the others don't like it you will have it all to yourself. I personally use a lot of salt and pepper. But I am now married to a Cajun lady who loves squash so I guess I will use a lot less.

1 cup buttermilk
1/2 cup yellow cornmeal
1/2 cup all-purpose flour
salt
pepper
vegetable oil, to a 1-inch depth heated until just before smoking
1 yellow squash, cut in 1/8 " - 1/4-inch slices
1. Soak squash in buttermilk to cover, at least 5 minutes.
2. Mix dry ingredients together.
3. Dredge marinated squash in cornmeal mixture (I use a Ziploc baggie & shake until covered).
4. Fry in vegetable oil until golden, turn and fry until lightly golden on other side.
5. Salt lightly, remove from oil, & drain on paper towels.
6. This is delicious - also works for fried green tomatoes (cut green tomatoes at least 1/4" slices).
7. If you like fried okra - batter should be 1 cup milk + 1 egg.
8. Dredge in same mixture as above & salt as you do for squash & drain on paper towels.

If you parboil the squash first, then saute in oil or butter and garlic, and then sprinkle with however much salt and pepper you want. I generally use lots of pepper but hardly any salt. By pre-cooking the squash, it doesn't stay that long in the oil or butter.
If you are talking about deep frying, parboil first also, then put on the breading. Then you just cook it until it is golden.

Fried Squash

Preparation-
Melt the butter in a large skillet over medium to medium-high heat. Add the yellow squash and zucchini; cook and stir until lightly browned and tender. Transfer to a bowl, and toss with balsamic vinegar.

Slice squash 1/4 inch thick.
Heat oil in a frying pan
Dip slices in flour and put it in frying pan.
Fry until golden brown.
Salt right after you take them out of the pan
(put as much as you like, ok?)
Serve immediately.
