FAMOUS AMISH FUNNEL CAKES
3 eggs, beaten
2 c. milk {regular or 2% }
1/4 c. sugar
4 c. flour, sifted
4 tsp. baking powder
1/2 tsp. salt
To beaten eggs, add milk and sugar. In separate bowl sift dry ingredients. Add to egg mixture, beating until smooth. Heat oil to 375 degrees and pour batter into hot fat through a regular household funnel. Control the flow of batter by holding your finger over the bottom of the funnel.
Make patterns, designs, swirls or whatever with the stream of batter as it flows into the hot fat. When "cakes" are golden brown, drain, sprinkle with confectioners' sugar and serve warm. Also can be served with your favorite jans, jellies,fruit or syrup. But the traditional way is dusted with confectioners
sugar.

I do not believe your other suggestions would work the cake batter would not hold up to frying. the pancake batter doesn't
have enough eggs to keep it from soaking up to much grease. This takes a little time to get used to pouring the batter with the funnel but it works fine after you get the hang of it. Good luck with your funnel cakes.

**** Cake batter will fall apart in the hot grease, it is not the right consistency, here is an easy funnel cake recipe for you try it, and you will like it.
FUNNEL CAKES
1 1/3 c. flour
1/4 tsp. salt
1/2 tsp. baking soda
3 tbsp. sugar
2 tsp. baking powder
2/3 c. milk
2 eggs
Powdered sugar
Beat eggs slightly; add milk. Sift dry ingredients together; add to milk, egg mixture. Beat until smooth. Heat 1 minute the oil in 7-inch skillet. Use 1/4 cup batter for each cake. Pour batter into funnel, holding finger on bottom of funnel. Drop in spiral motion over hot oil. Brown, then use tongs to turn and brown on other side. Drain on paper towel. Sprinkle with sifted powdered sugar while hot, then serve.

Funnel Cakes
1 and 1/3 cups flour
4 teaspoons non-fat dry milk powder
4 Tablespoons sugar
1 Tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
optional: 1/2 teaspoon grated orange peel or lemon peel
1 large egg - beaten lightly
3/4 cup water
enough canola or vegetable oil for deep frying
confectioner's sugar for dusting on top
warm syrup or fruit to serve alongside
Mix flour, milk powder, sugar, baking powder and baking soda, salt and (if using) orange or lemon peel in bowl. Stir in eggs and water, and mix until smooth. Let batter stand 15 minutes. Get out a heavy, deep skillet. Heat enough oil in skillet to equal 1/2" deep, to a temp. of 370 deg. F. Get out a metal or plastic funnel. Put a finger over the opening and fill with batter. Move funnel over to oil in pan-- remove finger and drizzle the batter into the hot oil in a spiral shape, or "figure 8" (or your honey's initial), use only enough batter to have your shape go from edge to edge of the pan. (*If you don't have a funnel, just pour the batter from a cup into the hot oil, enough batter to make a figure 8 that fills the pan for each funnel cake). Fry til golden brown (about 1 minute), then carefully turn over, using two spoons or spatulas, and cook other side for 2 to 3 min. Remove with slotted spoon, and drain on paper towel. Dust with confectioner's sugar and serve with jam or warm syrup.
