Garlic is not expensive...you're right. There are wonderful Italian dishes that feature garlic...or the French garlic soup with poached eggs (see Julia Childs). You could do a simple pasta with slowly sautéed garlic, a lovely chix stock, and then chopped parsley and parm. cheese. The cheese would be the only real expense, although fresh pasta makes a world of difference. Many recipes on many sites suggest how to do that. Great Parm is another luxury that makes a real difference.

Spagetti w/ meatballs!! add some garlic
Then some cheesy bread or if you dare Garlic bread!!
And that can feed 5 ppl and you can have round two! Or have left overs!!

white bean chicken chili
Its fast, cheap, tastes great, and healthy to boot. You make a lot of it and have some later.
Ingredients
2 tablespoons olive oil
8 boneless, skinless chicken breasts, cut into cubes
2 onions, chopped
2-1/2 c chicken stock
1 tsp dried oregano
1 tsp dried cilantro
1/4 tsp cayenne pepper
2 tsp ground cumin
1 can diced chiles
1 jalapeño pepper, diced with seeds and stem removed
3 cans cannellini (small white) beans, rinsed and drained
5 green onions, chopped
1/4 lb shredded Monterey Jack cheese
Sour cream
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add chicken and onions to pot and sauté for 8 minutes or until tender.
3. Mix in chicken stock, oregano, cilantro, cayenne pepper, cumin, chiles, and jalapeño pepper. Reduce heat. Simmer for 15 to 20 minutes.
4. Add beans. Simmer for 10 minutes. Garnish with green onions, shredded cheese, and sour cream. Serve with cornbread or some sort of bread and make garlic butter for it. Mash garlic cloves into whipped butter for a great spread.

cook fat egg noodles (al-dente') rinse in cool water to stop the cooking! In another pot add 2 cans of tuna in oil, 2 cans of cream of mushroom soup, Put garlic in a garlic press, Squeeze garlic over all noodles. Add 1/4 cuo of warm milk to all. Mix in a nice warm bowl-( micro wave till warm)-the bowl. Asaigao or parmesan cheese will make you scream with delight!

Meatloaf with baked potatoes . That's what we had tonight. I love oven dinners . Have a salad or veg on the side.
I like to cook the potatoes in the microwave for 5 min before I put them in the oven. 350 degrees Fx 1 hour.

Spaghetti is QUICK and EASY!
cook noodles in boiling water
Chop up onions and LOTS of garlic and sautee in olive oil until soft.
Add ground beef (optional) and brown then drain.
Add sauce from jar and one small can of tomato sauce.
let cook for 30 minutes.
Add salt and other seasonings to taste 5 minutes before serving.

Lasagna! Use the 'no boil' method on the side of the box, use spaghetti sauce for the filling, add meat to it if you want. While it is baking, you can make your sides and set the table. It always comes out good for me!
And for socalmal- I've had the White bean chicken chili too, it is really good!

Oven Pork Chops and Veggies-YA
4-6 pork chops
olive oil
thyme
garlic
salt
freshly ground pepper
1 lemon, zested and juiced
2-3 kinds of veggies (such as: potatoes, sweet potatoes, onions, zucchini, squash Roma
tomatoes, parsnips, or pears)
Preheat oven to 425 F. Chop up your veggies into quarters and 2" chunks. Toss them in a bowl and coat lightly with olive oil. Add some thyme, garlic, salt and pepper. Rub thyme, lemon zest and salt and pepper on the chops. Squeeze lemon over the chops. Place the chops in a roasting pan or casserole on top of the veggies. Cook for 30 minutes or until the meat is tender.
CHICKEN FETTUCCINE
1 box fettuccine
1 stick butter
2 lbs boneless, skinless chicken breast
1 cup half and half or cream
1/3 cup Parmesan cheese
1/4 cup green onions, chopped
2 cloves garlic, minced
1 Tbsp. lemon juice (optional)
Melt butter in skillet and saute chicken which has been cut into 2 inch chunks. When chicken begins to take on color, add garlic and green onions. Add remaining ingredients except lemon juice cover and simmer over low heat until mixture thickens and chicken is tender. Serve over cooked and drained fettuccine. Sprinkle with lemon juice and additional Parmesan cheese if desired. Serve with baked potato, your favorite vegetable, and tossed salad.
Quick Hamburger and Macaroni Dinner
1 box elbow macaroni or Ziti
2 tbsp. vegetable oil
1 lb. ground beef
1 tsp. salt
1/4 tsp. pepper
garlic powder, to taste
1 small chopped onion
chopped celery
chopped green pepper
1 jar red spaghetti sauce
Cook macaroni according to the directions on the box. In a large skillet add oil. When oil is hot add the rest of the ingredients, except the sauce. Cook until meat is browned. Meat will break apart into smaller chunks.) Add sauce and cook for 5 minutes more on low heat. Toss with cooked macaroni.
