Zucchini Pancake Parmesan
I know it sounds weird, but these delightful pancakes are delicious, nutritious, creative and low fat! These came out of me intending to make eggplant parm, but realized at dinner time I had forgotten to buy the title ingredient!
2 medium sized zucchini (when shopping for zucchini, look for firm fruit and dark green color), shredded on a cheese grater
1 egg (or 2 eggs whites)
1/2 cup bread crumbs
1/2 tsp kosher salt
1/2 tsp Italian seasoning
Non stick cooking spray
1 cup marinara sauce
1 cup part skim mozzerella cheese
In a large bowl, combine zucchini, egg, breadcrumbs, salt and seasoning. mix together well until zucchini hold together (if wet add more breadcrumbs or a tablespoon of flour, if falling apart add anout egg). Divide mixture into four even sections.
Spray a foil lined baking sheet with non-stick spray. Take the first section of mixture and form a round cake about 1/2" thick. Place on sheet and repeat for the rest of the mixture.
Place cakes under the broiler for about five minutes, until golden brown, then flip cakes. Broil a few more minutes, then remove from oven. Dollop about 1/4 cup (or enough to generously coat) each dake with marinara. Sprinkle cheese on top. Replace under the broiler for one minute or until cheese is melted and bubbly.
There is also eggplant, chicken and veal parmesan of course. I also use marinara to make minestrone soup by adding stock, pasta and vegetables. Also, add olives, capers, and red pepper flakes to it and you have puttanesca sauce with a slightly different flavor for pasta or shrimp. Also, pour some on your favorite fish and wrap it in parchment paper (cooking en papillote is the term). Bake it in the oven at 400 degrees about 15 minutes and the sauce steams the fish and melds with it juices, making it delicate but flavorful.

I make chicken Cattatori using left over KFC or Popeye's fried chicken and its easy and tastes great!
Dave's Chicken Cattatori
6 to 8 pieces left over KFC or Popeye's fried chicken
1 bell pepper, seeded and sliced
1 yellow onion, sliced
1/2 lb. sliced crimini or button mushrooms
1 26 oz. jar or 3 1/2 to 4 cups left over marinara sauce
Place chicken in a 9 X 13 baking pan. layer onions, peppers, and mushrooms over chicken. Top with marinara sauce. Lightly cover with foil and bake at 350 degrees for 35 to 40 minutes. Serve
Serves 4 to 8

My mother is always making crazy things and she takes boneless, skinless chicken breasts and put them in a piece of tinfoil pour the marinara on the top of the chicken just enough to cover top and then she would take zucchini slices and put on the top of that and top it off with some mozzarella cheese and bake it in the oven all wrapped up for about 25 to 30 min @ 400 degrees it is really go and something different

Marinara Salad
Drizzle sauce over romaine lettuce with olives, tomatoes, onions, bell peppers and Parmesan cheese...serve with garlic bread.

Chicken Catiatore... saute some onion and grn pepper in the marinara, then brown some chicken pieces amd let stew for a while. MM MM good

in a greek restaurant in my town, they give you this cheese bread (bread with melted cheese on top) with marinara...it's really yummy. or you could take bread dough and wrap it around a string cheese stick, then bake and dip in marinara sauce, also good.

If you like shellfish, mussels. Heat up the sauce, plop the mussels in & cover until they've opened up. Serve with garlic bread and you have an awesome appetizer.

How about polenta? Or a rice dish? Or as a dipping sauce for fried mozarella and zuchinni? Its also good in meatball sandwiches and as the base for minnestroni soup.

i love it with greasy frozen finger foods (ie deep fried mozzarella sticks, onion rings, zucchini strips, mushroom caps)
marinara sauce is healthier than ranch and has a nicer kick to it :)
