The UK PS3 is PAL and therefore will only play PAL games.
The HK PS3 is NTSC-J and only plays NTSC-J games (PS1/PS2) - on top of this, it is region locked for DVD's to region 3, and region A for Blu-rays.
Apparently, both PS3's are region-free for PS3 games and as a result will play any PS3 game regardless of where it comes from.
And finally, the HK PS3, its games and accessories are much cheaper, as expected.

depends on how u mean HK
if it's UK spec machine.. nothing
BUT sony don't like people selling their products out of region.
if its a HK spec machine it might be region locked for that area.. so you might only have playback for games from there.
i used to get my consoles from america for 2 reasons ... my n64 and snes came from there.
1) 60hz (not rubbish 50 hz pal slowed down ports)
2) using a none english country machine is risky, and I didn't want to learn how to read japanese.
only downside were the import games were like double the cost .

NTSC 60GB has the best backwards compatibility with PS2 games due to Emotion Engine (PS2's CPU) and Graphics Synthesizer (PS2's GPU) installed.
PAL 60GB - reduced backwards compatibility with PS2 games. it has only Graphics Synthesizer (PS2's GPU). Around 80% of PS2 games can be played.
80GB - extended memory, but reduced backwards compatibility with PS2 games, it has only Graphics Synthesizer (PS2's GPU). Around 80% of PS2 games can be played. Available only in NTSC regions.
40GB is all the same everywhere.
