chicken pot pie
one dish, easy to make
Ingrediants:
chicken (shred it)
1 can condensed cream of mushroom soup
1 can mixed vegetables (drained)
2 cups of shredded cheddar cheese
1 package frozen pie crusts (2 in package)
-Take 1 pie crust and lay it into a loaf pan ( trim the edges)
-place in oven on 350 and brown crust
-in a bowl mix all the other ingredients
-microwave mixture until warm before putting into crust
-spoon heated mixture into crust
-top with second crust - close by creasing edges with a fork
-cut 2 slits in top
-bake in heated oven until crust is browned
-serve
delicious!

There is a recipe on the back of the stove top stuffing mix box. It is designed for uncooked chicken, but I think that if you mix it all together with the cooked chicken it will be fine. You will just be heating it all up, as the chicken is the only item that really needs to cook.

Chicken Salad Wrap:
Skin and break up / cut up chicken meat. Place in bowl. Season with a bit of celery salt, salt, black pepper, a smidgen of Paprika. Add a bunch of red and green grapes, coarsely chopped walnuts, chunk up 3 stalks of celery, medium dice 1/2 white onion, 1-2 cups mayo (NOT M. Whip). Combine/ stir all ingredients. Add a Romaine Lettuce leaf or two to a veggie tortilla shell. Place at least two large scoops of the chicken salad to it, roll it up like a wrap, cut in half and eat and enjoy. My kids love this treat. It is sweet, salty, and oh so tasty.

Here are two possibilities. The first is a casserole:
CASSEROLE - In a casserole dish layer the following:
1 layer of steamed broccoli
Top with a layer of cubed or shredded chicken
Top that with a mixture of:
- 1 can of cream of whatever soup (mushroom, celery, chicken)
- 1/2 c of mayonnaise
- 1 tsp curry
- ground black or white pepper
Top that with a layer of shredded cheddar or cojack cheese
Top that with a layer of bread crumbs
Dot the top with dabs of butter
Bake in 350º for 35-40 minutes or until bubbly. Very good.
If you want light, then make this salad:
- Place salad fixins in the bottom of individual bowls (use your serving bowls for each person for this one - don't fill them - just layer things in it for them to either eat straight or mix up)(Salad fixins being lettuce, radishes, celery)
- Place 1/2 apple - chopped - with peel over salad fixins
- Place 1/4 c cranraisins over the apple
- Place 1/3 c cubed or shredded chicken over the cranraisins
- Place 1/8 cup EACH of toasted walnuts or pecans, toasted sunflower seeds and toasted pine nuts over the chicken
- Sprinkle Feta cheese over the nuts
Serve with a small custard bowl of Raspberry Vinaigrette (Hickory Farms makes a good one) for each person to spoon on however much they want.

Enchiladas - just fry up some onion, throw in some shredded chicken and taco sauce.
Roll up the mix in tortillas and bake topped with cheese until golden brown.

My favorite way to have baked chicken, is shredded, and inside a chimichanga! You actually have to bake the chicken first anyway, then shred up the meat, mix with sour cream, a tbsp of cornstarch, salt pepper, and taco seasoning or other random mexican tomato based condiment, Roll it up in a tortillia, then smother in salsa and cheese and bake in the oven. Arriba!!!!

I agree with Hoppykit. Make fajitas. Cut up some green and red bell peppers, onion, fry them, throw in some celantro and use a fajita spice package. Don't forget tortillas and guacamole. yummers!

add a little bit salt, sugar, soy sauce, wine and pepper to stir the chicken. I usually remove the bones and tear the meat into the smaller pieces first.
