I just happen to have jiffy corn muffin mix in my cupboard and made up a box using 3 1/2 Tbs. of mayo in place of one egg since the measurements are about the same. I love pepper jack cheese and green chilies in my cornbread. here are my results right out of the oven. The batter was a little drier with the mayo vs. the egg when I mixed the batter. But I think the mayo made a better product! I did a mini loaf and 3 muffins out of the box of muffin mix. The finished baked corn bread was more moist than with the egg and held together nicely. in another words the bread/muffins were not dry and crumbly made with the mayo. I will use mayo again for my next batch. Thanks for the inspiration! When I'm camping I'll use 4 packets of mayo which equal out to about 3 1/2 to 4 Tbs. mayo. COOL!

My daughter wants some jiffy cornbread and I don't have eggs, so I'm about to try the Mayo. Will post how we like it.

Of course- check the main ingredients for mayo- eggs and oil!! ( for all those who think gross- ) use 1/4 cup mayo instead of the egg. This will give you a moister, less crumbly cornbread, which many prefer anyway!

I agree get an egg ....but it was moist using the mayo as a substitute....but I was doing Jiffy Cakes and that didn t work out well...if I had been baking it...I think it would have been fine.

Egg 1 whole (3 tablespoons or 1.7 oz)
2 1/2 tablespoons of powdered egg substitute plus 2 1/2 tablespoons water
OR 1/4 cup liquid egg substitute
OR 1/4 cup silken tofu pureed
OR 3 tablespoons mayonnaise
OR half a banana mashed with 1/2 teaspoon baking powder
OR 1 tablespoon powdered flax seed soaked in 3 tablespoons water
