it is always 165 degrees regardless of cooking method. However, you should remove the turkey from whatever you are cooking at 161 degrees and let it rest for 20-30 minutes, the carry over cooking outside of the oven will bring it up to 165. If you cook until 165, it could be overcooked and tough.

165* on the dark meat if that's done breast is done even when you take it out of the oven it will rise in temp to at least 170*
