In most instances your eggplant doesn't have to be cured. If you do, slice your eggplant to the desired thickness, immerse in salted water overnight, dry the slices well and do what you intended with them.I have only been growing eggplant for the past three years. Not once have I cured them and the dishes have been terrific.

Peel and cut eggplant into slices (rounds). Sprinkle w/ kosher salt and set in a colander on top of a dinner plate. Let sit 15 min, flip over, set sit again.

i think it means to sweat it i just salt it and after a while i wipe it off and cook as normal. i like eggplant too i coppied the recipies so thanks 4 asking!

cure... im just guessing that means like make not so bitter?
id add a little bit of salt and heat it up
then prepare
