The oil represents the Holy Spirit. When a person is ill the pastor or priest will anoint their head with oil.

There were several reasons. Some of the others have mentioned "anointing" for various reasons: Saul and David were chosen, thus anointed, to be kings of Israel. You can read of other anointings in the Old Testament--go to www.blueletterbible.org
Then type in anoint* (using the asterisk or snowflake [I've even heard it called a splat, but have no idea why]) to see what you'll find!
In the New Testament times, there were a couple of uses for anointing, too. You'll probably see a few of these in your search. But the clearest reference is in the Book of James, chapter 5, and verses 13-15, tell about someone who's sick, apparently so ill that he had to call for help from the elders of the local congregation. These folks were to place some medicinal oil on the sick man, praying that God would restore him to health. I know of a few people who have requested the pastor of their church perform this kind of anointing.
Other than that, I can't think of any other reason.

The Bible does say that they would do it so we do it too but it's only when they are praying for you its not like an every day thing.
If you read Psalms 23:5 it says there:
You prepare a table before me
in the presence of my enemies.
You anoint my head with oil;
my cup overflows.

Oil is representative as a anointing of the Holy Spirit. Like baptism...it's not the water that saves, but the faith that gets you in the water
