BAKED CINNAMON APPLES

4 baking apples (Rome, Beauty, Golden Delicious)
4-8 tbsp. granulated or packed brown sugar
4 tsp. butter
1/2 tsp. ground cinnamon

Core apples and pare 1 inch strip of skin from around middle of each apple or pare upper half of each to prevent splitting. Place apples upright in ungreased baking dish. Place 1-2 tablespoons sugar, 1 teaspoon butter and 1/8 teaspoon cinnamon in center of each apple. Pour water (1/4 inch deep) into baking dish.
Bake uncovered at 375 degrees until tender when pierced with fork, 30-40 minutes. (Time will vary with size and type of apples.) Spoon syrup in dish over apples several times during baking if desired.

Wash the apples thoroughly. Remove the cores with an apple corer or a paring knife. Place the apples in a heatproof shallow baking pan, such as a square 8" x 8" cake pan or a 13" x 19" roasting pan, depending on the number of apples to be cooked. Stuff the apples with a mixture of raisins, brown sugar, and cinnamon. Pour boiling water into the bottom of the pan to cover the bottom with about 1/4" of water. Bake in a 350 degree F oven for about 45 minutes.

Baking time will vary depending on the size of the apples. At 45 minutes, pierce one apple with a fork to see if the apples are tender. Serve warm or cold plain, with whipped cream, or with ice cream.

Good luck!

Note: You can substitute cinnamon red-hot candies for the cinnamon and part of the sugar if you'd like to impart a nice red color to the syrup made by the baking apples.

Pecan-and-Dried Fruit Baked Apples

1/4 cup chopped pecans
6 large Gala, Rome, or GSmith apples, cored
1 tablespoon lemon juice
2 tablespoons butter, softened and divided
1/2 cup raisins
1/4 cup dried cranberries
1/4 cup firmly packed brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup apple cider
1/4 teaspoon vanilla extract
2 tablespoons rum (optional)
Garnishes: whipped cream, toasted pecans

Place pecans on a baking sheet, and bake at 350° for 12 to 15 minutes or until golden brown, stirring once. Set pecans aside.
Make 4 evenly spaced vertical cuts through each apple, stopping halfway from bottom. Brush insides of apples with lemon juice. Place apples in a 9-inch pie plate.

Combine 1 tablespoon butter, raisins, and next 4 ingredients. Stuff mixture evenly into apples, pressing into center of each apple. Top evenly with remaining 1 tablespoon butter. Pour cider, vanilla, and, if desired, rum around apples in pieplate.

Bake at 350° for 1 hour and 20 minutes, basting twice every 30 minutes or until apples are tender. Transfer apples to a serving dish, reserving juices, and keep warm.

Pour juices through a wire-mesh strainer into a small saucepan. Bring to a boil; reduce heat and simmer over medium heat 8 to 10 minutes or until mixture is thickened and is syrup consistency. Drizzle over warm apples; garnish, if desired. Serve immediately.

Yield: Makes 6 servings

I have baked them simply in the oven with the core taken out filled with a little butter, brown sugar and raisins or wrapped in some puff pastry or pie dough filled with the same or my favored jelly. Served with some vanilla sauce or vanilla ice cream

One simple way is to core the apple, stuff it with raisins, brown sugar, cinnamon and butter and wrap it in foil.

Bake about 250'-350' until tender.

Take the core out with one of those gadgets then fill the hole with sultanas and brown sugar. Stick it in the microwave for a couple of mins till the apple flesh is soft.
