Turkey should be safe to eat for up to a week after Thanksgiving provided that it is properly wrapped and refrigerated.

Leftovers should be saved for two days Max. After this point, bacteria may become a problem. If you have a lot of turkey left, take it off the bone and freeze it in a couple of zip lock bags. That way, you won't end up tossing it.

Hope this helps :)

I wouldn't eat it past Tuesday, unless it is smoked, then you can get a couple weeks out of it if it's refrigerated.
