I always like to marinate my chicken in Italian dressing before I cook it, if I have time. Overnight is best, but several hours doesn't hurt. Drain the chicken and then make your favorite recipe. Here are some of my favorites:
1. Chicken and artichokes: saute chicken breasts until golden and place in baking dish. Top with quartered artichoke hearts and goat cheese. Cover and bake for 40 minutes or until juices run clear.
2. Stovetop baked chicken: sprinkle chicken with seasoned salt and fresh ground pepper. Saute on top of the stove until browned. Cover and let simmer for 20 minutes. Remove from pan and add 1 1/2 cups water. Bring to a boil. Add Stovetop Stuffing Mix and remove from heat. Cover for 5 minutes and stir before serving. Top with chicken gravey.
3. Chicken Parmesan: sprinkle chicken with salt, pepper, and garlic powder. Roll in flour and dip in egg wash. Roll in panko bread crumbs seasoned with salt, cayenne pepper, and parmesan cheese. Saute in olive oil until golden and remove from heat. Place in baking dish and cover with your favorite marinara sauce. Sprinkle with parmesan and mozarella cheese. Bake for 40 minutes or until bubbling. Serve with your favorite pasta.

I put lots of bbq sauce on the bottom, then add the chicken, then a lot more bbq sauce, and cover with tin foil. Bake at 350 degrees for about 45 minutes. Turns out pretty tender.

Honey-Baked Chicken:
2 hours
6 servings
3 lbs broiler-fryer chickens, skined
3/4 cup yellow squash, Shredded
3/4 cup zucchini, Shredded
1/2 cup onions, Finely chopped
1/2 cup celery, Finely chopped
1 1/4 cups toasted sesame, wholewheat breadcrum
1 clove garlic, crushed
1 egg, beaten
1/4 cup pecans, Chopped
1/4 teaspoon salt
1/4 teaspoon pepper
3 tablespoons unsweetened apple juice
2 tablespoons honey
Discard giblets and neck of chicken (or save for stock.) Rinse chicken under cold, running water, and pat dry.
Set aside.
Coat a large nonstick skillet with Pam; place over med-hi heat until hot.
Add yellow squash, zucchini, onion, celery, and garlic, and saute until tender-crisp.
Drain.
Combine vegetable mixture, breadcrumbs, egg, pecans, salt, and pepper in a med bowl; stir well.
Place chicken, breast side up, on a rack in a roasting pan that has been coated with Pam.
Stuff lightly with dressing mixture.
Truss chicken (or put ball of foil in opening.) Combine apple juice and honey, stirring well.
Brush chicken with half of apple juice-honey mixture.
Bake at 350 deg F for 1 1/2- 2 hours or until drumsticks are easy to move and juices run clear, basting occasionally with remaining apple-honey muixture.

I'm actually baking chicken right now with a rosemary, garlic, lemon paste...I use 4tbsp chopped rosemary (fresh), 1 tsp lemon zest, 1.5 tbsp lemon juice, 3 garlic cloves minced, 2 tsp kosher salt, 1/2 tsp pepper, 1 tbsp olive oil all mixed together and rubbed onto the chicken, let it "marinate" for an hour in the fridge then bake it!

Sometimes I put a little Fajita seasoning on it along with other spices, add some lemon juice and let it marinate all day-then bake it and then 10 minutes before it is done-I brush a small amount of bbq sauce on it.

Tuck in some whole cloves of garlic in the legs, sprinkle with salt, pepper and oregano and a little paprika. Don't forget to put butter under the skin. Yum!

I like to marinate it in Italian dressing, cut up chicken. Plus I like to do it whole and stuff it with basil and onions, rub the outside with salt pepper and garlic powder.

My mom uses Lipton French onion soup mix. It is delcious. Plus sauted onion. It is wonderful!
