As I am Jewish, the most important rite of puberty-to-adulthood for us is the bar/bat mitzvah. A "bar mitzvah" is a "son of the covenant" ("bat" is daughter); a person BECOMES bar/bat mitzvah whether there's any celebration or not, just as you become a legal adult in secular society when you turn 18, whether you have a birthday party or not. Bar/Bat mitzvah observances have become more common in the last couple of generations, since people do not marry as early as they once did, and another way to recognize their status as adults came to be needed. Prior to that time, it was not generally too many years after a person became bar/bat mitzvah that he/she was married, and that was all the recognition needed.

The quiceanera. I don't think I spelled that right, but you give a15 year old a party. I went to one, it's KEWL!

And there is one I think where the pagans allow their 13 year olds finally study other religions and make a choice for themselves if they want to be a part of the religion or something.

well there are many coming of age rituals
from quincinera in spanish speaking countries to sweet-16 party to things like confirmation in a church. or allowing you to choose your own classes. you really don't have to go outside usa. some are physical and a bit gruesome like circumcision, pulling teeth or slashing chests (aboriginal).
sometimes it involves killing a certain animal or for example getting married.
