I am making nuggets tonight by dipping chicken pieces in butter, then rolling them in my breading mix, then cooking them in the oven.

Would it make any difference if I made the nuggets before hand without baking them and place them in the fridge for a few hours before baking them?

I just want to make sure they still come out crisp outside and tender inside.

You might want to consider partially cooking them and then finishing them before serving. This is how they cook extra crisp french fries in most restaurants. You might also want to consider using panko bread crumbs in your breading instead of traditional breadcrumbs. The outcome will be crisper and equally as flavorful.

Well when I make chicken or chops, I coat the meat first and then I fridge. It make the coating turn into a batter like and it comes out better. Good Luck (I used flour and salt/pepper).

I think it will be fine. If you used eggs they would be soggy, but the butter will keep them crisp.

Do not bread them ahead of time they'll be soggy.

you would have to freeze them, or the coating will be mushy
