I am graduating from undergrad this summer. I will not be allowed to walk across the stage until December (my school does not have commencement celebrations in the summer). I am taking only 1 class in the summer and I will be completed with everything. Will I be able to apply for jobs/internships with major companies that ask for graduates as of May 2008?

You won't have graduated as of May. But you could still apply, mentioning in your cover letter that you will be completing your degree in August by taking one summer course. Once you finish that course, and receive a passing grade, you can apply for jobs claiming the degree, even though the official ceremony won't be until December.

When I completed a masters degree in February, but there was no ceremony until June, they gave me a letter saying I had completed the requirements for the degree - I don't know if all schools do that.

Not sure, but you have to apply for Graduation and your guidance counselor should be able to answer this. I would think this is a viable option and has been done before. Ever university and state is different, and it is difficult to say without knowing the school. The best answer to this question is to ask a guidance counselor.

As for the class, the employer might not care as long as you submit a degree within a certain amount of time, and as long as the class does not interfere with work. So, I would say yes, you can find employment, but it maybe more difficult if you live in a place with a struggling economy.
