A University Professor once ask me this same question.
Experience in life expands a human beings knowledge.
Knowledge within man is constantly changing.
Knowledge allows man to form beliefs.
Beliefs sometime enable man to stimulate knowledge.
Both have their limits!
A human must transcend both belief and knowledge and diligently pursue "Wisdom".
It is the "Wisdom" that dwells within the heart of man, that gives an affirmation as to whether mans belief system and knowledge base are in "Unity" with what man calls "Truth".
It is indeed the "Wisdom" within man that allows man:
1. To know if a belief is filled with "Truth".
2. To know if a belief that has been formed through knowledge is indeed filled with "Truth".
The mind of man is often deceiving, and it is "Wisdom" that further clarifies the questions that arise throughout mans life!
Belief and knowledge must exist in a "State of Unity".
Wisdom is the tool that enables this to be possible.
May man learn to live in a "State of Unity".
All countries and their peoples, must also learn to live in a "State of Unity".

I would say I believe what I know. I try to keep my beliefs to what has evidence in favor of it. I admit to varying levels of certainty and the possibility of error.
I think admitting the possibility of error and checking statements against reality (via observation and experiment) is the best way of determining what is true. It's the harsh elimination of claims that don't survive scrutiny that leaves you with the truth.
