It varies on the length of the flight etc. Many times on longer flights the crew stays over but its not cast in stone. On the big international flights the crew has sleeping quarters on the plane. On puddle jumps in the US they usually go back to their home base.

When traveling across the oceans, the flight crews will usually have a 24 hour layover when they land. They then take the plane home that lands the next day, unless it's a multi-day trip that continues beyond the first layover stop.
