does this cause an issue with bacteria?

No don't leave the stuffing in the bird, it's best to take the stuffing out of the turkey.

Why?

Stuffing inside of a turkey is very dense and there's a lot of thermal mass that needs to be cooled down. The concern is that by the time the center of the stuffing reaches "safe" temperatures, bacteria would have had enough time to multiply and create problems.

No, it is not safe to leave the stuffing inside a turkey overnight. In fact, it is recommended to stuff the bird right before you bake it. The stuffing in the bird provides a prime growing place for bacteria. If you leave stuffing in the bird overnight, by morning it will be laden with bacteria and very risky to consume. And, as always, please test the temperature of the stuffing in the bird before you pull it out of the oven.

Hope this helps :)
