Does anyone have some recipes for easy to cook dinner meals that anyone can reccommend.

My husband does 70% of the cooking (due to me suffering from chronic migraines) and I am wanting to start doing more and cooking dinners at night. I like cooking but find I tire easily so would love some recipes that are not to complicated but taste yummy! We love all sorts of different cuisines also!

Cowboy Tacos:

Prep Time
30 min. Cook Time Serves 12

1 pound boneless pork loin, cut into 1x1x1/4-inch strips
1 (1.25 ounce) package Old El Paso(R) Taco Seasoning Mix
1 tablespoon oil
1 cup Old El Paso(R) Salsa
1 cup canned spicy chili beans, undrained
1/4 cup apricot preserves
1 (4.6 ounce) package Old El Paso(R) Taco Shells
10 pitted ripe olives, sliced
5 green onions, chopped

In shallow bowl, combine pork and taco seasoning mix; toss to coat.
Heat oil in large skillet over medium-high heat until hot. Add pork; cook and stir 3 to 5 minutes or until no longer pink.
Stir in salsa, beans and preserves. Reduce heat to low; simmer 10 to 12 minutes or until thoroughly heated, stirring occasionally.
Meanwhile, heat taco shells according to package directions. To serve, spoon 1/3 cup pork mixture into each taco shell; top with olives and onions.
Yield: 12 servings.

Fiesta Chicken Pasta:

Prep Time 5 min. Cook Time Serves 4

2 cups rotini pasta, uncooked
1 tablespoon oil
1 pound boneless skinless chicken breasts, cut into bite-size pieces
2 cups chopped red peppers
1/4 cup KRAFT Zesty Italian Dressing
1 tablespoon chile powder
1/2 cup TACO BELL HOME ORIGINALS Salsa
1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
1/2 cup KRAFT Shredded Cheddar Cheese

Cook pasta as directed on package.
Meanwhile, heat oil in large skillet on medium-high heat. Add chicken. Cook and stir 6 min. Add peppers, dressing and chili powder; cook 3 min. or until chicken is cooked through, stirring frequently. Stir in salsa and sour cream.
Drain pasta. Toss with chicken mixture. Sprinkle with cheese.
Yield: 4 servings

Bell Pepper Nachos:

Prep Time 15 min. Cook Time 5 min. Serves 14

2 medium green bell peppers
1 medium sweet red pepper
1 medium yellow bell pepper
2 ripe medium plum tomatoes, seeded and chopped
1/3 cup finely chopped onion
1 teaspoon chili powder
1/2 teaspoon ground cumin
1 1/2 cups cooked rice
1/2 cup shredded Monterey Jack cheese
1/4 cup minced fresh cilantro or parsley
1/4 teaspoon hot pepper sauce
1/2 cup shredded sharp Cheddar cheese

Cut peppers into 1-1/2- to 2-in. squares. Cut each square in half diagonally to form two triangles; set aside. In a lightly greased skillet, cook the tomatoes, onion, chili powder and cumin over medium heat for 3 minutes or until onion is tender, stirring occasionally. Remove from the heat. Add rice, Monterey Jack cheese, cilantro and hot pepper sauce; stir well.
Spoon a heaping tablespoon onto each pepper triangle. Place on greased baking sheets Sprinkle with cheddar cheese. Broil 6-8 in. from the heat for 3-4 minutes or until cheese is bubbly and rice is heated through.
Yield: 14 servings.

Cheddar Broccoli Chicken and Mashed Potatoes is so easy and ready in under an hour.

INGREDIENTS
1 tablespoon vegetable oil
4 skinless, boneless chicken breasts
1 (10.75 ounce) can Campbell's® Condensed Broccoli Cheese Soup or Campbell's® Condensed 98% Fat Free Broccoli Cheese Soup
1/3 cup milk
2 cups fresh broccoli flowerets or frozen broccoli flowerets
4 cups hot mashed potatoes

DIRECTIONS
Heat oil in skillet. Add chicken and cook until browned.
Add soup, milk and broccoli. Heat to a boil. Cover and cook over low heat 5 minutes or until done. Serve over potatoes.

New England Pot Roast Brown the meat on all sides. Spread with prepared horseradish and add a cup of water. Cover and simmer for about 2 hours. Add to the pot chunks of carrots, potatoes, onions and whole garlic cloves. Simmer for 1 hour more.

HUNGARIAN GOULASH

2-1/2 lb. beef, cut into chunks
1/2 garlic clove, crushed
1/2 c. onions, chopped
2 Tbsp. butter
2 C. water
1 C. catsup
1/2 tsp. dry mustard
1 Tbsp. paprika
2 Tbsp. brown sugar
1 Tbsp. salt
1 tsp. Worcestershire sauce
1 tsp. vinegar
1 tbsp. flour
8 oz. noodles

Brown beef with onion and garlic in large skillet with butter. Add water, catsup, and seasonings, cover and cook at low heat until the meat is tender, about 2 hours. Mix flour with 1/4 c. of water and add to hot mixture, stirring constantly, and cook until thick. In the meantime cook noodles in boiling salted water. Drain, mix with part of the sauce from the meat, and serve with the meat over them.

HAMBURGER PIE

1 -1/2 lbs. hamburger
1 can cut green beans, drained
1 can beef gravy
1 onion, chopped
Salt and pepper to taste
1/2 can water
Mashed potatoes

In a large skillet, saute the onion. Add the hamburger and brown in a skillet. Season with salt and pepper. Stir well. Add green beans, beef gravy and water. Cook 4-5 minutes more. Pour into a casserole dish. Top with mashed potatoes. Bake at 350 F. for 20 minutes. Serve with a salad, and refrigerator biscuits. Serve gelatin for dessert.

CREOLE FRANKS

5 slices bacon, diced
1/2 c. onion, chopped
1 c. unsweetened pineapple juice
3/4 c. catsup
1/8 tsp. chili powder
1-1/2 lbs. frankfurters, sliced
1/4 c. green pepper, chopped

Cook the bacon in a large skillet, but do not crisp. Add onion and cook until tender. Add green peppers. Cook 2 minutes. Stir in pineapple juice, catsup and chili powder. Add frankfurters and simmer for 10 minutes. Serve over cooked white rice or mashed potatoes. Add a green salad, and crusty bread with butter to complete the meal.
