I have put together a list of my favourite cookbooks for you based on my experience. My wife is an Italian chef and we live in Italy so you can be sure these books are the best. This is my list

Any of The Best Recipe cookbooks from the editors of Cooks Illustrated magazine. They are fascinating to experienced cooks, and give wonderful instruction for more beginning cooks.

Also: I would recommend any local Junior League cookbook. Charity cookbooks have some really good recipes that have been tried a hundred times by the ladies that submit them. They typically have really tasty recipes and are time-tested, not just 'sound good' in the recipe book. As much as I love more popular chefs, sometimes their food sounds better than it actually tastes. A good Jr. League cookbook will always have great, palatable recipes.

Tough question there are so many these days and with so many chefs turning out books it really boils down to specialty. AS a collector of cookbooks I advise you to look for a book from a favorite restaurant or from a desired vacation spot (like Morocco) The fun of a cookbook goes beyond the "gourmet" and into the pleasure and experience food can impart. My Favorite cookbooks come from local community churches and include "family" recipes like one I got from a Greek Orthodox church has the best and easiest Phyllo dough recipe - it is easy enough to make on a weeknight and when making Pot Pies for the kids since it is made with olive oil it cuts the fat beyond half and is more heart smart. Hope this helped and Good Luck!

I have hundreds of good cook books and yet I routinely turn to a few which are my favorites:
Martha Stewart Living Cook book (compiled from her magazine and I have seen this one on sale for $20. at a local wholesale club store this week)
The Best Recipe from the editors of Cooks Illustrated. On Ebay you could find this for less than cover price.
The New Basics Cookbook (Rosso and Lukins) is creative and fundamental.
Good luck!

The Joy of Cooking is a classic that belongs in every kitchen.

My personal favourite is The Art of French Cooking by Julia Child. A classic as well.

It really depends on the recipient and what kind of cook he/she is.

Believe it or not, my favorite gourmet cookbook is called "gourmet" and is the accumulation of several years of the best recipes by the magazine of the same name!
