Navy bean soup is very good with the ham bone. You can also mix different kinds of beans (like Navy or Great Northern, anasazi, pinto, kidney, soy, lima, etc. - except black beans - don't add them or your soup will be a purple color).
Take your beans, diced onions, diced carrots, diced celery, a bay leaf, black pepper and your soup bone.
First put whatever beans in a pot that you want to use - add water and bring to a boil. Boil 1 minute, put the lid on and turn off the burner. Leave sitting there for 1 hour. Then drain, add new water and you are ready to start your soup. Saute the onions, carrots and celery in a little oil until the onions are translucent and then drop into the soup. Add everything in with the beans and bring to a boil. Turn down your heat and simmer until the beans are done to your liking. Some people like them creamy so they cook longer and some like them to have some texture. If you mix the beans (especially with the soy beans added) some will be soft and some with texture. Minimum cooking time seems to be about 2 hours but depending on how you like your beans it could go as high as 3.
I remove the soup bone just before serving, take the meat off the bone, cut it up, and put the meat back in the soup. I also add some extra slices of the ham cut into cubes and just heat them in the soup.

my mom always made pea soup but my kids didn't like beans so I made a vegetable barley ham soup that was great. I used the ham bone and whatever ham left over, onions,celery,garlic,small cubed potatoes,small diced carrots and barley and cooked it for several hours, the potatoes help absorb the extra salt from the ham and at the end I add whatever leftover cooked veggies I have left, the potatoes also thicken the soup naturally without having to add a thickener.Its what Rachael Ray would call a stoup. not a soup and not a stew,kind of in between.If you like beans,open a can of white or lima or whatever beans you like and they also will help thicken it.Don't forget to put enough water to cover the bone and veggies.
