Hi friend. LDS people definitely do not undermine women. My wife would find that question funny. (No offense.)
The Church of Jesus Christ of Latter-day Saints (Mormonism) is a beautiful Christian religion. You should be extremely careful when trying to learn about Mormons from others. There are many who hate the Mormons and spread lies, distortions, and conspiracy theories about them. Others think they understand Mormon doctrine because of "what they've heard," but are actually misinformed.
Because Mormons are Christian, we believe in most of the things that Christians believe, including:
1) Christ is divine and salvation comes only through Him.
2) The Bible is the word of God.
3) Men ought to love one another.
Mormons are a unique branch of Christianity, however. We are neither Catholic nor Protestant, so naturally we have some different beliefs. Most of the differences are minor. One significant difference has to do with the authority to act in God's name. Mormons believe that soon after the death of Christ and His apostles, the early Christian Church was greatly influenced by Greek and Roman philosophies and political pressures. Despite the efforts of many good men and women, the true Church of Christ was eventually lost because of these outside pressures and internal, man-made changes. Mormons believe that God reestablished the original Church of Christ in 1820 through a man named Joseph Smith.

Hope this helps! Mormon Christianity has changed my life by helping me better follow Jesus Christ.

That is a way big question to answer all at once. However, I will address the "undermining women issue".
Neither is the man without the woman nor the woman without the man in the Lord. Man does not dominate the woman but is charged to protect and nurture and provide for her. She is to be an equal partner in furthering God's plan for His children here on earth. She is a companion and help mete. The mete word indicates that she is made for or fitted for man. In other words, it was intended that she should be with man and likewise, that man should be with woman for it is not good for man to be alone. Therefore, a man shall leave his father and mother and cling to his wife and unto none else. We do not demean woman in any way. Her purpose in God's plan is distinct and unique from man's purpose. She is a partner with God in bringing forth children. It was never intended that man and woman should compete for the same niche in life. Their differences are intended to compliment one another and to fulfill each other's destiny. Neither of us can achieve or reach our full potential without being partnered with the other.
The richness of the marital relationship cannot be compared to any other experience in life. It is satisfying, yes even fulfilling, to know that you have a loving companion by your side throughout life and into eternity. We can walk hand in hand, side by side, into forever.

When asked this question by a newspaper reporter by the name of Wentworth, Joseph Smith gave this response. It is now called the "Thirteen Articles of Faith>'
1. We believe in God, the Eternal Father, and in His Son, Jesus Christ, and in the Holy Ghost.
2. We believe that men will be punished for their own sins, and not for Adam's transgression.
3. We believe that through the atonement of Christ, all mankind may be saved, by obedience to the laws and ordinances of the Gospel.
4. We believe that the first principles and ordinances of the Gospel are: first, Faith in the Lord Jesus Christ; second, Repentance; third, Baptism by immersion for the remission of sins; fourth, Laying on of hands for the gift of the Holy Ghost.
5. We believe that a man must be called of God, by prophecy, and by the laying on of hands by those who are in authority, to preach the Gospel and administer in the ordinances thereof.
6. We believe in the same organization that existed in the Primitive Church, namely, apostles, prophets, pastors, teachers, evangelists, and so forth.
7. We believe in the gift of tongues, prophecy, revelation, visions, healing, interpretation of tongues, and so forth.
8. We believe the Bible to be the word of God as far as it is translated correctly; we also believe the Book of Mormon to be the word of God.
9. We believe all that God has revealed, all that He does now reveal, and we believe that He will yet reveal many great and important things pertaining to the Kingdom of God.
10. We believe in the literal gathering of Israel and in the restoration of the Ten Tribes; that Zion (the New Jerusalem) will be built upon the American continent; that Christ will reign personally upon the earth; and, that the earth will be renewed and receive its paradisiacal glory.
11. We claim the privilege of worshiping Almighty God according to the dictates of our own conscience, and allow all men the same privilege, let them worship how, where, or what they may.
12. We believe in being subject to kings, presidents, rulers, and magistrates, in obeying, honoring, and sustaining the law.
13. We believe in being honest, true, chaste, benevolent, virtuous, and in doing good to all men; indeed, we may say that we follow the admonition of Paul--We believe all things, we hope all things, we have endured many things, and hope to be able to endure all things. If there is anything virtuous, lovely, or of good report or praiseworthy, we seek after these things.

LDS lady here - i'm not suppressed - my hubby does not rule over me [neither did my father].
We strive to teach our children that we are children of God and joint heirs with Christ of all that God has. As a child of God, each one has inherited a divine nature and characteristics and we encourage them to discover their talents.
One of the reasons many people state that Mormon women are subserviant is that the men hold the priesthood -- women do not. That policy comes from God, not man. Nor does that mean that women aren't involved in the church [I myself teach Sunday School]. The Relief Society of the Church of Jesus Christ of Latter-day Saints is the largest women's organization in the world. Each ward or branch of the church around the world is organized with a Relief Society - which is for women only. In the regular organizational meetings which oversee the welfare of the members of the local ward or branch, the President of the Relief Society is vital in helping the other leaders understand and cope with the needs of the congregation.
For the past several years, I have noticed that the General Authorities of the Church have strongly counselled the men to be righteous in their dealings with their wives and families. President Hinckley was always a tremendous example of gentlemanly behavior in his treatment of his dear wife [who died several years ago]. He has mentioned several times the hole in his life without her. He was always courteous and mindful of her -- and the lady was a fireball -- she spoke at a regional conference near my house years ago and had us all in stitches as she teased the prophet about their anniversary and relationship.
But my words here mean little, our perspectives have developed differently. To know for yourself how women are treated in the LDS Church, go to a local ward meeting or activity and see for yourself how the people interact. It's all rather Norman Rockwellish.
Best wishes
EDIT: rac said it well - re-read his comment.

We believe that the fullness of the true gospel of Christ was lost from the earth as the early saints were persecuted and the apostles were killed. Over time some doctrines were lost or distorted. However, Christ restored his gospel through a living prophet, Joseph Smith, and he continues to call living prophets to lead us.
