I know to change the water that you soak them in overnight before boiling...but do you change the water again during the time that you boil them? Im trying to cook them so that the beans dont give gas, so thats the goal.

im not sure if it affects the gas subject but normally no, you would not change the water until you are done when you rinse them

Put in a teaspoon or two of ground ginger when you start them. This will cut the gas effect. It will not be enough to give any flavor.

It is best not to drain off the soaking water. Just add enough more water to the pot to start cooking.

Draining off the soaking water or changing the water during cooking just drains off all the water soluable vitamins!!!

No matter what type beans I am cooking, I add the ground ginger to cut the gas effects. This is to about 3 cups of beans in a 2.5 quart slow cooker or kettle. A larger amount of beans like 5 cups in a 5 quart slow cooker would require more ginger.

No you dont change water, you can put a slice of bread to water to avoid gas or 1 tea spoon of baking soda.
